See, I am not very good at this blog thing yet! Forgot an ingredient and directions! No big deal, really.  I just sprinkled coconut over top of the Hawaiian Chicken before serving! 
Lately, I have been trying to save a few dollars at the grocery store. I have not cooked nor baked this much in years!  I love looking at all the recipe sites online. I read cookbooks like novels. The Food network is always on my TV! 

I have found the most wonderful homemade bread recipe! It is so easy, I have made it three times so far this week! Here is the link. http://breadbaking.about.com/od/yeastbreads/r/1loafbread.htm. Be careful though. You will want a stick of fresh butter and a couple of knives when this comes out of the oven! I doubled the recipe and made two loaves and it was just fine!

I saw this recipe on Facebook for Hawaiian Chicken. I thought it sounded so good, then I read the reviews! So now, I am craving this dish and the reviews are awful. I thought about it for a couple of days and decided, What have I go to lose?  So, this is my Hawaiian Chicken, Kimmie Lou style!

HAWAIIAN CHICKEN

Ingredients to gather:

4 Skinless, Boneless Chicken Breasts, cubed
1 Medium Onion Chopped
1 Green Pepper chunked
1 Red Pepper chunked
1 Can Chunk Pineapple in it's own juice
1 Can Mandarin Oranges in juice
3/4 Cup packed Brown Sugar
1 Cup Pineapple juice (from can, add water to make one cup is necessary)
1  Orange Juice
1/2 Cup Low Sodium Soy Sauce
2 Tablespoons of Corn Starch
Salt & Pepper to taste


Combine the pineapple juice, orange juice, soy sauce and brown sugar in large gallon size zip lock bag. Squeeze bag until sugar is dissolved. Add to this mixture, the chunked chicken. Marinate for a couple of hours in the referigerator.

When ready to put meal together, Put 2 Tablespoons of oil in a large skillet. Preheat. Add chicken without the marinade. Cook until almost done. Remove from skillet and add veggies, stir fry until tender crisp. Mean while, add the corn starch to the marinade and squeeze until dissolved. This will make a slurry. Add the Chicken, pineapple, and mandarin oranges to the skillet, pour slurry over all.  Cook and stir until thickened.

I put this over rice. My favorite is Minute Rice, it's a no brainer. Enjoy!  Left overs are great! I had them for breakfast this morning!

A Beginning............Must be breakfast!

I love to cook! I love to bake! Even more than cooking and baking I love watch people enjoy my offerings! So, with that in mind, I have been encouraged to do a cooking blog. Don't know how to blog, but, here we go! 

Yesterday, I made scratch biscuits and sausage gravy! My daughter Audrey is a bread and potato-holic and had been on me to make her some biscuits and gravy. So, being the loving mother that I am, I finally got myself into the kitchen!

As soon as I figure this all out, I am sure this will be a much cuter blog! With Photos even!

BISCUITS

Preheat Oven to 425F

Ingredients to gather:

2 Cups All Purpose Flour, sifted
1/2 Cup Butter Flavor Crisco Shortening
4 Tablespoons Water
1 Tablespoon Baking Powder
1 Teaspoon Salt
3/4 Cup Milk or Buttermilk

In Large bowl, combine flour, salt, baking powder. Stir with fork. Add shortening and water. Cut shortening into dry ingredients until crumbly.  Add milk and stir until dough follows fork around the bowl. If sticky, add flour 1 Tablespoon at a time, until no longer sticky.

Flour counter and turn dough onto floured surface. Do not knead, I find this makes the biscuits tough. Pat out dough to about 1/2 inch thickness. Cut with biscuit cutter, place about 2 inches apart on ungreased baking sheet. Gather dough, pat and cut until dough is used.  Bake in hot oven for 12-15 minutes or until golden brown. This makes about 10-12 biscuits, depending on what size your biscuit cutter is.

I also use this for my strawberry shortcake. I just add a tablespoon or two of sugar to make the biscuit a bit sweet. Split biscuit, on bottom layer add a scoop of ice cream, cover with berries. Add biscuit top, cover with berries and whipped cream.  Yummy!!!

Sausage Gravy

Ingredients to Gather

1 lb Bulk Breakfast Sausage
1 Stick Butter
1/2 Cup Flour 
3 Cups Milk

In hot skillet, brown sausage, breaking up while browning in pan.  After sausage is nicely browned, add the butter. Stir until melted . Once butter has melted, add flour to mixture and stir until flour is incorporated into butter & sausage. Add Milk, stirring until thickened and bubbly.  Add Salt and Pepper to taste. Once desired thickness is achieved, turn off heat, split biscuits and cover with gravy.  Rib sticking breakfast!
